Here's the recipe!
1 medium pumpkin-cleaned out!
1 chopped onion
1.5-2 lbs ground beef
2T soy sauce
2T brown sugar
4 oz can mushrooms
1 can cream of mushroom soup
1.5 C cooked rice
8 oz can water chestnuts, drained
Preheat oven to 350.
Brown ground beef and onions. Remove any fat.
Add soy sauce, brown sugar, mushrooms and soup.
Simmer 10 minutes, stirring occasionally.
Add cooked rice and water chestnuts.
Spoon into pumpkin.
Replace pumpkin top. Place on baking sheet.
Bake 1 hour or until pumpkin is tender.
You can use cooked pumpkin for your veggie. My kids weren't really into eating the pumpkin. Earl and I ate some, but you'll want to season it to taste.
For me, the pumpkin is more for presentation and tradition than for eating as part of the meal, but we love it!!
